About Ordering a Santucci Pizza
All pizzas prepared at Santucci’s are made the old fashioned way: we hand toss our Pizza Dough & stretch it out on a wooden Pizza Peel. It’s then “painted” with homemade Tomato Sauce & topped with Mozzarella. The Pizza Peel is dusted with Semolina to slide the Pizza into the 650° hearth oven. Because our oven is 650°, our Pizzas are cooked crispy along with the Semolina creating a unique & flavorful Crust. (The little black spots under our Pizzas are the charred Semolina).
 
Our Pizza Dough
Our Dough is made fresh right here at Santucci’s. We never use “fresh” Dough to make our Pizzas! That’s right, although we make Dough daily, the Dough used to make the Pizzas is at least two days “old”. The fact is, like fine wine, Pizza Dough needs time to ferment or “Proof” properly, as the Yeast needs more time to consume the Nutrients in the Dough, which makes for a flavorful Crust that will cook crispy in a 650° hearth oven. “We will cook no Dough before its time.”
 
Our Pizza Sauce
An Old Italian recipe that has stood the test of time, handed down from one generation to the next: prepared fresh from whole Pear Tomatoes, we grind the Tomatoes & add our secret Herbs & Spices to create a Pizza Sauce that is refreshingly unique & delicious.
